Bethu (Fermented Soy Beans)
Bethu, or fermented soy beans, is a food that the Bnei Menashe people love. It is often made into a spicy chutney. Here’s the recipe, provided by Gershom Thangneo Touthang:
First step: Soak dried soybeans for 7-8 hours or overnight.
Second step: Boil the beans until almost but not quite fully cooked. (You can also use a pressure cooker; whistle it 6-7 times.
Third step: Remove the beans and let them cool down for a bit and than transfer it into a container with an air tight seal. Allow it to ferment for 3-4 days in warm temperature.
